How does the iPad Pro use Face ID without a notch?
Assuming you mean the iPad Pros that were announced back in December 2018, they have a larger surface area and a bigger screen. The bezels themselves fit quite comfortably to encompass the screen and don't cover the entire front of the iPad. Therefore, it is safe to assume that all the required sensors for Face ID can be placed there without the need for a notch.
All you have to do is pick up an iPad Pro and examine this yourself.
